Every week, without fail, I make Fajita's in my flat for my cousin and me. We LOVE fajita night!!
It's really simple to do, quick, easy, cheap and tastes so goooood.
It's maybe not a traditional Mexican recipe but makes a tasty student version. The recipe will feed four, but when it’s just the two of us, I use half the packet of beef and freeze the rest for next week.
What you'll need...
- packet of stir fry beef
- mushrooms
- onions
- red peppers
- fajita spice mix
- Cajun spices
- cooking oil
- packet of large tortilla wraps
- sour cream
- guacamole
How to do it...
- With a pair of scissors, cut the beef into smaller strips and put in a tub or bowl. This makes it cook quicker and go further.
- Add a couple of table spoons of oil and the fajita seasoning to the beef, I like a kick to my fajita's so I add the Cajun spices to it as well. Let it marinate, the longer you leave it the more flavour your fajitas will have.
- Prepare the vegetables. Slicing the mushrooms, onions and peppers into even sizes. These are our favourite, you can add your own or remove any your not keen on. How much veggies you have is up to you.
- Heat a frying pan until l it’s HOT. Add the beef first, and then all your veg. keep stirring!!
- Cooking time depends on how you like your beef cooked and what beef you use, see the packet for guidelines. It's perfect when it’s done for about 6/7 minutes.
- Set out your wraps and spread some sour cream on them, just like buttering a slice of toast.
- When the beef and veggies are ready, share it out equally into the middle of the wraps. Add guacamole, personal preference.
- Fold up the bottom of the tortilla, this stops everything falling out when you pick it up, then roll it up.
- That it!! It's that easy to make a Mclardie Fajita.

How spicy are your mclardie fajitas? Always looking for new tasty treats, but dnt like anything too hot!
I like the fajita's hot, and adding the extra spices does make them pretty firey. There are guidlines on many of the fajita seasoning packets, so if your not a fan of spicey I'd go for a mild version instead.
